I read that the mqtt protocol can be used on fmb003, where can I find documentation, or is there another tracker that uses mqtt?

Hello.
MQTT is supported since 03.28 firmware.
Note, that we don't share any files on Crowd support, therefore please contact your supplier and ask for firmware update.
