Hello, I need configure a server for DualCam. I found a configuration but with few details: server ip and port.

No details to deploy my own server, like protocols and more, only

As for the data protocols - Codec 8 Extended has to be enabled and implemented on the platform. After this is done, you should be receiving the AVL IDs 497,498,499 on the platform side.
